@rolodoom you didn't provide anything for the values in the other settings around whether the pickup time is required or not or whether you have it tied to Local Pickup shipping methods. It is highly recommended to use at least the Local Pickup shipping method option if you haven't tried using it. In the future the generic Local Pickup time will most likely go away. Also do you have any other WooCommerce plugins installed related to checkout customization or order customization?

Got the same problem
Describe the bug Time Selected is "NONE" on order and email and there is no Pickup date. Is the same as #124 that is closed. But I still getting same error on more recent version of woocommerce / wordpress so I think the bug still exits.
