feat: add mermaid support and update readme #383

Closes #382

This PR adds support for Mermaid to the docs, as well as a <MermaidWrapper> component so that large diagrams can be opened in a new window.

Good question. I'm thinking of packaging the common ones into maybe an npm package at some point, but we're still not stable enough for that yet, methinks. Structurally, I'm still moving a lot of things around at the moment. I can foresee it would be big enough to be its own project though, cos i'm not sure how to bundle everything neatly.
