hdf5 output by default and make exponential transform an explicit option #512

Make hdf5 output the default and deprecate ROOT output (can still force it if needed)

Also makes the exponential transformation of yields used for the gen level fit to helicity cross sections an explicit option rather than hardcoding it based on the nominal histogram name.

No changes expected in the ci except for maybe numerical differences for some of the workflows which are switch from ROOT output to hdf5. (but we should make sure any differences are carefully understood)

For the main CI everything is identical including impacts up to 2 decimal places. Some incidental changes in sorting of impacts below that.

Let's wait for the unfolding CI, but most likely this is going to be ok.
