Document Paper plugin remapping #345

As the title says, I added some documentation about the Paper plugin remapping. Many people have been confused about it, so it's clear that some documentation on the matter would be good. See also:

I added a section about alternative forks of AnvilGUI that use Mojang mappings in 1ffdb88, let me know if I should keep that in or not. For reference, see the lengthy discussion in #330.

I think remove the fork section and I'm good to merge this. I really appreciate the work in the fork and I'd rather the fork be contributed downstream so we can all benefit from a single source of truth.
