On WikiToLearn there are many simple statistics: every user has edit counts associated with their account, and for every edit the number of added and removed bytes. You can have a look at https://reports.wikitolearn.org for an idea of the available data.

Think about a "points" system so that people can start out as rookies, and edit their way up to Masters of the Universe. Decide names and levels, and how to achieve them.
