Use stable branch for FFmpeg testing #93

Lets use stable FFmpeg to avoid unnecessaring regressions in tests like https://github.com/Windows-on-ARM-Experiments/mingw-woarm64-build/actions/runs/7691458527/job/20965400192.

This PR is needed to fix automatic rebases.
