I just ran ".\configure-jupyter.wls add" again and now it works again. Will update if it breaks again.
One hour later: It broke again. Running that command is not fixing it either. Maybe it was just coincidental timing before?
I selected "end task" in task manager for everything that had the word "Wolfram" in it, moved the folder with the unzipped contents to where I permanently wanted to keep it, followed the instructions here again, and now it seems to be working. Again, I'll update if it breaks again.
I had everything working just fine, then suddenly I was disconnected from the kernel and can't reconnect to it in either Jupyter environment.
WolframScript continues to work fine.
