3 years ago Seem to have found the problem. There was an update to another mod called "More Game Rules". It added rules for faster conversion speeds and this makes it incompatible with "Easier Realm Management". Would you be able for create a patch for this mod? I will note this for the mod creator for "More Game Rules" as well to see about patching or integrating your mod if that is ok.
This may be an issue with the patch, but when telling my council to perform the convert tasks for culture or religion they complete the task for one county and then return to court despite there being more counties needing to convert. I have tried to use both settings and even found that after switching to the actual "return to court setting" after completing the task the setting resets to "auto" but doesn't actually auto convert anything.
