I have a PoC script that is packing whole LÖVE project into a single exe: lovesfx. This might be out of scope of this project, but maybe you can consider implementing something similar into lover. Technically, it's just a self-extracting archive that would extract LÖVE runtime and all the assets into a temporary location, then launch it, after it's terminated, it would clean up the temporary location.
