Looks like Spaces in Matrix can achieve this, but there's no way to group/order/prioritize those groupings to really limit what Matrix shows you on desktop/mobile, so having some way to do that would be massively helpful. For what its worth, I tend to group my channels and then set the group to "Show and sort" > "Unreads only" so that I can hide channels with no activity / ones I've muted and focus mostly on the messages that matter to me. Does NOT seem to be a way to achieve this with Matrix, which most likely means I'll end up leaving a TON of channels and limiting how closely I want much of things around WP.
While Element doesn't have a way of hiding rooms without unread messages, you can sort the rooms with unread messages to the top:
I can see how this is still a bit more cluttered, I'll try to find if there is an issue on the Element repo to offer hiding rooms without unread messages.
One difference between Spaces and Slack's room grouping is that a room can be in multiple spaces, thus you could create multiple spaces for yourself based on your priorities.
Closing this functionality has been explained.
Expected Behavior
Perhaps I'm not able to see how to do this in Element on macOS/iOS, but doesn't seem like there's a way to group channels (or rooms as I think they're called in Matrix). I tend to do this for similar things (e.g., Core, Community, WP 6.4).
Actual Behavior
As things currently work in Matrix its either Favorites, People, or Rooms with no ability to group things from there.
