There is a fix on the faq page, and you can change the default option in the
preferences.

Ah, now it works. Great stuff. I had to use the folder under /Library not the
one under ~/Library.
Here is a workflow I use with DVDFab. Perhaps it is useful to other users:
1. Install Subler.
2. Run Subler for the first time.
3. Copy the folder with Tesseract 3.02 language files to ~/Library/Application
Support/Subler. This means a folder with the name "tessdata" should be in that
location.
4. Install Perian by double clicking the preference pane in Perian_1.2.3.dmg.
5. Go to the preferene pane for Perian and set it to:
o Audio output: Stereo
o Play soft sounds: Normally
o Subtitle options: Load external Subtitles
6. Then locate A52Codec.component on your system. It should either be in
/Library/Audio/Plug-Ins/Components or ~/Library/Audio/Plug-Ins/Components.
7. Save the existing version to somewhere
8. Use the new version and copy it to this location.
9. NOTE: When you use "REMOVE PERIAN" in the Perian preference pane, this will
also remove the A52Codec.component. If you install it again, it will have the
wrong component, so you have to do steps 6-8 again.
10. Now go to Subler and use the following preferences:
o GENERAL
- ON Check for update: Automatically check daily
- ON Window: Remember size
- ON Chapters: Create Preview Images
- Show ratings for: All countries
o ADVANCED
- ON Alternate groups: Keep groups organised
- ON Convert: Vobsub to Tx3g
- ON AC-3 audio to AAC
- ON Keep AC-3
- Downmix audio to STEREO
- Bitrate (per channel): 96 kbps
11. In DVDFab, select the title and audio/subtitles you want to include in the
rip.
12. Select the "MP4 AppleTV" profile (custom profile).
o This will set the video track to HD and 1-pass/normal
o This will set the audio track to AC-3 5.1
o This will set the subtitles to externally generated subtitles
13. Rip the DVD/Blu-Ray with these settings.
14. In Subler, open a new file.
15. Add the ripped file containing video, AC-3 audio and chapter track.
o The AC-3 track should have the action "AAC + AC-3", which means the AC-3 will be included (passthru) and this will generate an additional AAC-Stereo track.
16. Subsequently import the IDX file for the subtitles.
o The Subtitles should have the action "Vobsub to Tx3g", which makes this AppleTV compatible.
17. Press the loupe icon to query the film in MoveDB and select the desired
artwork.
18. Delete any other artwork.
19. Submit the Subler command to the queue.
20. When ready, drag the file into iTunes.
21. When ready, in iTunes, look at the Metadata and change something.
o This will trigger a one-time and somewhat lengthy process that alters the file according to iTunes specs.
22. Done! Check in iTunes that all desired audio tracks and subtitles are
present by playing the file.

Well normally you can prepare everything in Subler.
I live in a german speaking country and my children know the name of the movies
by their German title. So that is how I store them in Subler/iTunes.
My brother is also ripping some movies and some of them I already have. He is
an all-english person. So that is why I change the title to the original
English title in iTunes and then I copy the movie to an USB stick.
What also happens is that I sometimes forget to change the album or I forget to
delete an artwork picture in Subler. Then I open the file that was just copied
to iTunes and change it in iTunes, which causes the long delay.

The funny thing is: If after you created the output file with Subler, you open
the resulting m4v AGAIN in subler, but you do not change anything, just check
all checkboxes, and then SAVE (not send to queue) the file, this is a pretty
fast save and the result is that iTunes now does not need to rearrange things.
So after the open/save in Subler you can drag the file to iTunes and edit
Metadata in iTunes without having to wait!
I guess Subler does not entirely optimise the file correctly but is able to do
that on the 2nd open/save.

I created a separate issue for the metadata edit issue in iTunes. I think this
is a m4v formatting issue in the 1st mux that Subler does.

You may close this issue as I understand how the preferences work now and
Perian together with the A52codec fixed the AAC + AC-3 issue. Thanks!
