6 years ago Correction: When the copper block is chiseled by hand, it visually stays chiseled in the inventory, but when /iteminfo is performed on it, it reads as OreGen copper block.
When a chiseled copper block is taken from the creative menu, it turns into an OreGen copper block when inventory is exited. When the copper block is chiseled by hand, it stays chiseled in the inventory, but turns into OreGen copper block when placed. Chiseling while placed with left click does not work. Have not tested other ore blocks yet.
