Try changing the control bar visibility setting in Player > General > Auto-hide bar
and see if either setting makes the issue stop.
Okay, picking either no bar hiding or hiding both the progress bar and control bar seems to fix the issue.
Thanks for that solution, it worked for me too. Only difference is that my video was jittering only with default player and not jittering when I selected HTML5 player at https://www.youtube.com/html5.
Windows 8, Firefox 38.0.1, YouTubeHelpCenter version build 525. I tested several Firefox profiles: clean with no plugins and no addons (that means no Flash and no Adobe and no YTC!) - YouTube works fine with HTML5 player (apart from the usual autoplay and buffering issues); a profile with no plugins but lots of extensions - YouTube works fine until I switch from HTML5 player to default player; another profile with two Intel and one VLC web plugins installed (all set to Ask to Activate) - Youtube exhibited the jerkiness until I switched from default to HTML5. I also cleared all cookies before each test.
When in page mode, the control bar is popping in and out making the video jitter up and down (which is pretty nauseating). Firefox 38.0.1, HTML5 player, current dev version of YTC. Video capture of the issue: https://youtu.be/SfGimVyJ__E
