Through 'appearance > customize > Yoast SEO breadcrumbs'. You can edit the bereadcrumbs. if you have the breadcrumbs on the page, you can actually see the changes. It needs to reload the page on each keystroke/deletion though. So it feels kind of stuttery.
Editing of the site title or site tagline through 'appearance > customize > Site Identity' goes much smoother. It makes me wonder if it's possible to make the editing of the breadcrumbs run as smooth as the editing of site title and tagline.
