feat: Investigate Logging Game Statistics to Elasticsearch #85

For balancing purposes (and fun) we should investigate logging the following to Elastic with a Kibana panel:

Tower placement (Incl. Tower ID, Tower Type)
Tower removal (Incl. Tower ID, Tower Type)
Mob sending (Incl. Entity ID)
Mob dying (Incl. Entity ID)
Mob taking damage (Incl. Entity ID, Damaging Tower ID, Damaging Tower Type)

All data points should be tagged with:

Game ID
Player ID
Timestamp from game start

Also investigate whether we can instead use Grafana for this, possibly with Prometheus. This would save running yet another service.
