Most conferences are only held in a single language; infosec conferences held in the USA are generally held only in English.

There exist conferences that use multiple languages simultaneously, and we must accommodate them. The two biggest examples that I'm aware of are DEF CON China (Mandarin, English) and CCC's C3 (Congress) (German, English). There are smaller conferences (BSides-ish) that I believe have held their events in multiple languages (Spanish, English); I'm sure that the list of conferences that do this is much longer, and I'm just not aware of them.

Note that this is not the same as localizing the app's strings; that will be important to do for all of the languages we can plausibly support, but this issue particularly concerns the conference data itself. For example, a talk on the state of privacy in the EU might be presented by someone speaking English, but have slides available with real-time audio translation into French, German, Spanish, etc. The talk abstract would need to be available in each of the languages that are relevant for that particular talk, and the user would be given the choice of language ranking/enablement.
