update cardano node to 8.1.1 #55

note the libsodium revision change was already mentioned as a breaking change for node v8.0.0 https://github.com/input-output-hk/cardano-node/releases/tag/8.0.0

@abracadaniel I haven't built the image on my local machine yet. It's just so slow 🐌
