adds to/updates the main README in terms of contents, formatting, readability,

simplifies the ignore rules for .env files in .gitignore.
I'm not sure if Matomo-related settings should even be used for local development (which calls into question the inclusion of variables like NUXT_PUBLIC_MATOMO_ID in the template file) but went with what was already there.
