[FEATURE]: Pre-configured settings.json for InkycalOS-Lite #314

For Tindie buyers, include a pre-configured settings.json which works offline so that the display is at least reacting after boot. This can then be improved further by adding the QR code of the Inkycal quickstart video and some debug information, e.g. if internet access is available, display version, current date and time etc.
