This page has a character encoding issue on Linux systems:

So it turned out this wasn't a Linux issue, but a difference in the configuration of the assessment server and our local versions. Adding a response header to the header.php in commit 72a85c39f235b1d80180a6c93065ccac69ee6526 seems to have resolved this.
