Further extending the metadata schema to cover fields used at Wasser-DE

@jakobdeller I took the liberty of rebasing this to resolve the conflicts and take care of the purely technical issues that we still open in the code review. I also think we should aim to merge this before tackling more fields to keep the review simpler.
