Provide a Changelog #157

It would be great if this library could provide a changelog for each version.

It has a changelog for each major version: https://github.com/adamreisnz/replace-in-file/blob/main/CHANGELOG.md Minor versions are generally for bugfixes, but I'll try to also document any new features in the changelog going forward
