GoogleAI's team (that writes ORtools) actually have an prototype of this, using simplex to solve the nutrient arm of the problem. Based on a 1947 study no less!!

But there's a problem - I don't like shellfish. And I commute by bike. Does that mean that I can have a hamburger? This is a nice example of optimisation theory! Minimise my carbon whilst sustaining my nutrient needs and a few treats.
