Logs need expanding #535

We need to look to increase the level of logging (particularly around security and data access)

We currently have the following (hopefully captured everything):

Module loading events (ready/failed)
Route registration (API endpoints)
Unsecured route registreation
Course build events (& debug CLI output)
Unsuccessful auth
Schema registration
Email sending
Server errors (this encompasses most of the app errors)

Some starting points for these:

MongoDB CRUD (would affect all types of data)
Auth events (registration, successful, revocation)
