Updated the plotting introduction in the notebook for prediction interval

Unfortunately this notebook failed to run on my machine using CapyMOA 0.6.0:

Would it be possible to also remove this notebook from the notebook skip list in invoke.yml. This will allow github actions to test the notebook for us.
