feat: Add a nerf/toggle for Protection

What does it do?

Nerf to Protection that adds Instant Damage, Wither and Poison to the bypassed list that is currently only including Void damage, and Starvation damage.

Why add it?

Flavor-wise: "Magical" sources of damage would be more magical? Interesting vanilla-like nerf Balance-wise: the Wither boss is not even challenging, same with the rare and theoretically cool witch spawn, and also PvP Splash damage, or Poison arrows are a cool idea that currently doesn't do much
