[WIP] updated to latest openresty and config supervisor #58

I'm trying to upgrade it to the latest Openresty and Config Supervisor. Afterwards It would be great to split it in multiple images:

I've created adobeapiplatform/apigateway:1.1.2 tag to test this version of the GW.

thanks @atrifan ! I wasn't sure if you have been testing with 1.13.6.1. thanks for the confirmation.
