Are you working or planning on integrating any other input methods? Hydra, STEM, Oculus Touch?

Yes, although I don't own any of those devices yet. I think the Oculus Touch is particularly interesting. Within my apps, I place the input device behind an interface, so that will make it easier to add support for new ones!

how about doubling the string set to play with both hands at the same time, and instead of having a dedicated chord selector fixed in space, use the thumb angle relative to the hand to select the chords for each half of the strings? (thumbstick on Hydras, and touchpad on Steam VR controllers)

The double-string, thumb-angle concept might work! I haven't tried those devices yet -- would it be difficult to maintain the same thumb angle while moving the cursor around? The chord slices (if you use all 12 notes) are only 30 degrees wide.

For the chords selectors, I meant a similar mechanism as you show on the video, a pie selector where the middle position is neutral and the last option you touch is remembered; but instead of a virtual touchpad, it's based on the thumb orientation relative to the respective hand, and stick deflection with the Hydra and touch position on the Steam VR controller.

[...] I don't think it would be an issue unless you got some problem with your hand or brain. Visual feedback should probably be enough for beginners before muscle memory kicks in.
