If we drop support for Ubuntu 18.04 as suggested in #57, we should also drop support for Python 3.7 - this is no longer supported in the latest release of e3-core, in any case.
We might consider two versions of Python:
3.8, which is default on Ubuntu 20.04
3.10, which is default on Ubuntu 22.04
We might further consider tying the Python version to the Ubuntu version, to keep the matrix sparser.
