Elastic Email backend: improve webhook categorisation and remove debug file path #23

There are some webhooks that defy categorisation! This change notes them as Undocumented. Embarrassingly, it also removes a hard-coded line that logged requests for debugging purposes (which shouldn't have caused any problems, but should not be there.)
