So the opensearchonly profile runs a pristine opensearch container (represented by the mentorhub-searchdb service), while the search-db profile runs mentorHub's customized search database, correct? If so, it looks all right to me

Yeah. The opensearchonly profile runs a pure opensearch container, while search-db runs the customized search db that has the indices and mappings configured by the mentorhub-searchinit service
