Change the naming of the /ping endpoint #103

Normalize the /ping endpoint by naming it /health.

Tasks:

[x] Update Swagger documentation.
[x] Update developer documentation.
[x] Change the name of the endpoint.

Acceptance Criteria:

All the tests should pass.
The Swagger documentation should accurately describe the API.
