Comprehensive error and output logging for document analysis operations #72

When an error occurs (exception), the operation should be logged.

Tasks:

[x] Log all exceptions.
[x] Log output from document intelligence.
[x] Log output from gpt.

Acceptance Criteria:

All the errors should be logged in a log files.
The results are long seperately depending on their type.
