Switch modis_lst to process version 6.1 data #145

Testing this in a deployment right now, I'll mark as ready for review once I confirm it works

@sgoodm yes, it seemed unstable at 6 cores 6 processes (with one process consistently failing in the process task run), and I chalked it up to memory. 4 / 4 seemed to help, but it might be safer to go higher
