Investigate running a demo server

Create a demo server hooked up to ai-nekko Discord. Make the bot only work for a selected private channel.

Document the process of running this server in our wiki, so we can replicate it in the future.

@khasinski I've deployed project to fly.io, bot is live. No restrictions yet, so be careful when playing with it. Please check related PR for details
