Expand user interaction for domain_mapping function

I have updated the domain_mapping.R function to expand functionality for the user interaction

Proposed Changes

Added a new argument output_dir to the domain_mapping.R function so the user can choose where the output files go
Added functionality to allow the user to choose how many data elements (variables) to process in a table. This now allows the user to process one table across multiple sessions. The domain_mapping.R function used to have this functionality and it was removed - can't remember why!
Console output and csv log file now make it clearer how many variables have been processed out of the total number of variables for that table
