[destination-pinecone] Connector for Pinecone Serverless #36817

What step the error happened?

Configuring a new connector

Relevant information

Attempt to configure new connector after migrating to Pinecone Serverless. Pinecone Environment in connector expects "us-west1-gcp" or similar but, server less presents region only and is expected to use the API through the pinecone.io host. There is no way to configure pinecone serverless as of now.
