feat: fixes to create export target and fix define override #9 #15

This would allow AJANTV2 to be added to the public vcpkg registry.

Also fixes the issues for #9 but one could argue that those defines from the defines list should move to become restrictive to only the NTV2 package as no other target seemed to require this while building test builds (on windows).

Some of my issues were addressed but after upgrading to a newer SDK I have other issues.

But I'll close this PR and open new PRs to resolve those issues!
