chore: update Waku deployments

• [x] Uses lates nwaku (v0.26.0)
• [x] Connects to The Waku Network
• [x] Removes the minimal deployment
• [x] Explains the available config env vars better
• [x] Uses latest archive retention policy to avoid disk filling up
• [x] Uses lower default disk size for PG
• [x] Rename the manifests in attempt to get them show up in the Template section of Akash Console
