Adjust columns of yield visualisation

Feedback from GU:

• [x] overproduction is useless because it's not being reported correctly. Unit yield should be the default over total yield.
• [x] order of columns should be unit yield, waste, environmental, grow time.
• [x] variance of environmental variables is useful. Could try adding std deviation or min/max or both.
• [x] shelf is useful, column and zone not really
• [x] use the values for donut plots to pick fixed upper and lower bounds for environmental variables
