GSOC students are testing this repo and struggling to find files when reading documentation README.

I am doing a bit of restructuring to make it easier for them.

[ ] Move documentation READM file outside the folder so it is visible
[ ] Rename documentation folder as images (it is mostly screenshots connected to documentation READM file)
[ ] Add context in the README file in the pathways folder

Merging this to allow GSoC students to find the right files for their tests.
