Fix `pytest` `CI` for branch `R docker refactor for lab sessions` #123

There appears to be a docker build fail prior to running pytest in CI as of https://github.com/alan-turing-institute/clim-recal/actions/runs/7579822087/job/20644661421?pr=122

A CI refactor via mini-conda in commit https://github.com/alan-turing-institute/clim-recal/pull/122/commits/ecb21df074988ea996fa5bb0c13bb2ae2b429f8b seems to solve this, remaining issue appears to be rendering test coverage bade.

Largely addressed with d9947e2 except for test coverage badge.
