Create proper xarray for BA #24

Hi @mfbenitezp, @RuthBowyer could this be something I could help with? I've been playing around with xarray's for other things so would be happy to be of help.

Hey Aoife - GREAT you have been playing around with xarray - I think this will be really useful for scaling the DyME model (when we get there!) However, whilst it would be good to check with @mfbenitezp what his vision is as it could be my misunderstanding, I think now we have a better understanding of applying BA, and that given (hopefully, if everyone's on board) we'll be using methods from existing libraries across R and python I'm not sure it's necessary at present.
