Including a conda env file #22

To make easier the way people use the scripts included I have included a conda env file, and add some instructions in Docs to use that file before using the optional scripts.

This PR has all of the doc changes too; it's kind of impossible just to review the conda changes. For future reference, it's much easier to always keep main free from any pending edits. Just keep main up to date with the upstream repository, and always create a branch for PRs. You don't even need to work from your fork of the repo here; you're a member of this repo, so you can clone it directly, do git checkout -b foo to start a new branch, and open a PR from there.

I'll try and review / merge the other PR first
