Some minor updates for Docs and Main site for the AIUK app #50

Hi, just some new order to the Docs ( output) files now that we have several years and areas., a suggestion for a banner image for the main site in the AIUK app, and a suggestion of Logo ( Renaming the app as SPC Web Explorer).

I'm not sure how you're running Quarto, but we don't check in the generated .html or output_files directories. Could you remove those with git rm please?

Ah ok...I used the render from Vcode.

Thanks for the updates! I fixed some Quarto and Svelte stuff, will merge now

Also noting that the next person to regenerate data everywhere will need to update https://github.com/alan-turing-institute/uatk-spc/blob/8cfe03712267801fabc34b88e6b2e97512f6d43c/scripts/upload_data.sh#L24 to split the output per country-file
