Etherpad refactoring #69

After looking into this issue #45 again I decided against using the bigbluebutton/etherpad-lite fork because of following reasons:

quite outdated
multiple security updates since 2019 not included
the git history is quite chaotic -> therefore difficult to track changes

I rather prefer following approach:

Official and maintained etherpad branch / docker image
A Etherpad skin for the consistent look: https://github.com/alangecker/bbb-etherpad-skin
A Etherpad plugin for customization: https://github.com/alangecker/bbb-etherpad-plugin
Merge upstream necessary changes: https://github.com/ether/etherpad-lite/pull/4425
