Update config.toml #117

Small fix to correctly set the posts permalink setting (changes post to posts).

Similar to https://github.com/alanorth/picturingjordan.com/blob/master/config.toml

@sboots I'm not sure the distinction of "post" or "posts" actually matters, but I remember in #89 we changed some stuff to align closer to the Hugo quick start docs. Note that the exampleSite currently works because the permalink configuration of post matches the section type in content/post.

Having said that, I think I will merge this PR (and move the content/post dir) to be closer to the Hugo docs, especially since I've changed my personal blog long ago (as you pointed out).
