Very similar issue here i.e. Meross plugs (indoor, MSS310) available in the Meross app, but not in Home Assistant.
However mine is precipitated by loss of Wifi when my router reboots overnight. The plugs are both in the same room as my ASUS router. They come back in the app, albeit following a forced refresh in the UI. Maybe its possible there is a network outage, even a short one, and you are seeing the same symptoms?
Anyway, here's what I've tried
There's nothing conspicuous for Meross in the main logs, successful startup and a few:
[meross_iot.manager] Fetch and update done
However, and this may be key, I get:
[custom_components.meross_cloud] The HTTP API has found new devices that were unknown to us. Triggering discovery.
This is also reflected in the Integration UI where it asks me to re-add the plugs, however when you do it says "already added" and you're stuck with these rediscovered devices.
I am going to make changes to the LAN IP address for the plug and reserve in DHCP etc, I will report back if this helps. All other smart plugs from different brands come back fine following my overnight router reboot, except Meross. I think the fact that in my case, the app requires a manual refresh to re-detect the plugs (they are greyed out on initial launch), suggests a possible sequence / behaviour / caching in the cloud API.

My Meross Smart Outdoor Plug becomes unavailable in Home Assistant although the wifi signal is good and the plugs are reachable and reacting via the Meross smartphone app.
In Meross Cloud Options I tried all three configuration possibilities
