chore: bump storybook to v8

Description

Storybook 8 is here 🎉

Solution

• Needed migration for SB8 (argTypesRegex deprecated, Vite config not included)
• Small fixes/refactor:
  • @storybook/onboarding was removed but still in the listed addons
  • separated Vite config for storybook
  • removal of the VITE_CJS_IGNORE_WARNING environment variable now that SB has fixed it
