Tried to get transmission working with a remote NFS mount, realised it was missing the "watch" directory mount path, and fixed a couple of other things:

Added watch mount path to Transmission
Added subPath support to all volume mounts
Fixed Organizr image tag (there wasn't one for amd64-latest)
